Who has to give hygiene instructions according to LMHV §4?
How If you or your staff want to produce, handle or sell perishable food, you must first undergo food hygiene training in accordance with
Complete § 4 of the Food Hygiene Ordinance (LMHV).
This instruction applies to all persons who work in the catering, bakery and confectionery industries, with meat, fish or other perishable foods. You need the training before you can start your work.

During this training, you must acquire the relevant specialist knowledge. This specialist knowledge must be demonstrated to the food inspection authority upon request.
Examples of easily perishable foods include many fresh produce such as certain types of fruit (e.g. strawberries or raspberries), certain types of vegetables (e.g. lettuce or asparagus), meat, fish and milk.
Roughly speaking, it can be assumed that food spoils easily if it is not designed to be kept for a long period of time and therefore spoils in a short time.
The following teaching content is taught according to LMHV Annex 1:
- Properties and composition of the respective food
- Hygienic requirements for the production and processing of the respective food
- Food law: product inspection, shelf life testing and labelling
- Internal controls and traceability
- Emergency plan, crisis management
- Hygienic treatment of the respective food
- Requirements for cooling and storage of the respective food
- Avoiding adverse effects on the food in question when handling food waste, inedible by-products and other waste
- Cleaning and disinfection
How long is my certificate valid?
The LMHV §4 instruction must be completed annually.
What obligations do I have as a company?
If you own or manage a business, you must ensure that your employees are properly supervised and trained in food hygiene

How and when do I receive my certificate?
After ordering, you will receive the necessary course materials and the training video. After successfully completing the exam questions and entering

I realized I answered questions incorrectly. What can I do?
If you answer any questions incorrectly, you have the opportunity to re-answer them in the video. Once you answer all questions correctly, you will receive your certificate.
The certificate has an error, what now?
Unfortunately, typos sometimes occur when issuing certificates. Please send us an email with the correct information to info@schulung-lmhv.de – we will correct the certificate immediately and resend it to you.
I lost my certificate
Lost your certificate? It can happen. Please send us an email with your personal information to: info@schulung-lmhv.de. We will send you a replacement certificate immediately.
Why is the certificate always in German?
You can take the course in various languages. The certificate is a document that must always be issued in German, as it must be presented to your employer and, upon request, to the authorities.
